If you are looking at the GTK, then the 850 is your best bet... I feel the 1000 would be too laggy for your goals.
The other option would be to get the GTK 1000 and see how the lag is, if it's too much, swap out for the GTK 850 exh housing like my other customer did.

Im considering a GTK-1000 for a 2.35 Subaru build, although was concerned about spool, as its a manual gearbox, and the car is a road car.
But we'd like enough power to go pretty fast like your Eclipse

Not an easy question to answer. HP figures do tend to vary around the world. Often US WHP figures, can be closer to flywheel figures here in the UK.
But enough power to propel a 3200lb, 4wd saloon car, to very low 10's, maybe even a few 9's on road legal tyres ( ie not a drag radial, but a Kumho, or Toyo soft compound E-marked tyre ), manual gearbox.
And traps at 140+ would be nice too.
But as US figures go, perhaps 8-900WHP ? or a genuine 850-900 at the crank.
Oh, and fast spooling....lol
