Would the Merkur turbo be a good match for this type of system or is there a better alternative?
The car will be mostly street driven and is used as my daily driver so it has to be reliable. I'm not trying to make a monster race car out of it, I'm just looking to get a little more thrust when I step on the gas and I don't think the few bolt ons available for the V6 are going to make enough of a difference that I'd actually feel it in the drivers seat.

From what I can tell the Merkur came with a T3 turbocharger. The exact model I'm not sure. At any rate a T3 turbocharger in a single turbo configuration is going to be a bit small for your application. The turbo will spool up extremely quick but it is going to choke out quickly and you will begin losing power very rapidly. For a 4.0L V6 like the Mustang you would need to look at a much larger turbine and compressor wheel to really be effective.
